Preface

This book has been prepared with the specialpurpose of assisting mothers throughout thecountry to train their small daughters in the artof cookery. Scarcely any child can be trustedto take a recipe and work alone, as the clearestdirections need the watchful supervision of an experiencedwoman, who can detect the coming mistakeand explain the reason for doing things ina certain way.

All children like to experiment in the kitchen,and instead of allowing them to become an annoyance,they should be so directed that their effortswill result in immediate help to the motherand prove invaluable life lessons to the little onesthemselves. Nothing is really more pitiable thanthe helpless woman who, when occasion demands,finds herself unable to do ordinary cooking. Andthat young wife is blessed indeed who has beenprepared for her duties in the home by a conscientiousmother. Therefore let no woman thinkit too much trouble to teach her child the preparationof various kinds of food, impressing on herat the same time the dignity and importance ofthe work.

The following articles, though considerablylengthened and rearranged, were written at therequest of the Editor, and ran for a year in PictorialReview; and the encouraging letters theyelicited from women and children everywhere,prompted this publication in book form. The intentionhas been not to make a complete manualof cookery, but instead to create interest in enoughbranches to enable an otherwise inexperiencedperson to successfully put together any goodrecipe. Thanks are also due for the use of materialappearing in The Circle and Harper'sBazar.
